This recipe makes 4 mini cakes or 6 muffins (the nutritional table below assumes 6 muffins).
Ingredients
- 2 eggs
- 1/4 cup sugar
- 1 cup almond meal
- 1 orange rind, zested
- 1 tsp. baking powder
Method
- Preheat oven 180c. Set up little mini loaf tins or 6 muffin patties in a muffin tin.
- In a mixing bowl place eggs and sugar and mix for 1 minute with whisk.
- Add orange zest, baking powder then stir in almond meal.
- Spoon mixture into muffin patties and bake for 15 minutes or until cooked.
- Option to place a little sliced mango or orange on top, 2 minutes prior to removing from oven.
