We've encorporated this recipe in one of our weight loss diets for everyday people. Obviously you shouldn't be eating this type of dessert everyday, but it certainly can be part of a weight loss diet if combined well with other, less indulgent, foods.
We have used a 2 cup ramekin for each person for portion control. Don't over fill as this will rise and you don't want it to overflow, so only fill half way.
Ingredients
Pudding
- 1 cup self-raising flour
- ⅓ cup caster sugar
- 2 tbsp. cocoa powder
- 1/2 cup low fat milk
- 50g olive oil, light spread melted
- 1 egg, lightly whisked
- 2-3 second cooking oil spray
Chocolate sauce
- 1 ½ cups boiling water
- 2 tbsp. cocoa powder
- 4 tbsp. brown sugar
Method
- Preheat oven to 180 degrees. Set up your 6 (small) ramekins and give a quick spray in each one with cooking spray.
- In bowl combine the flour, caster sugar & cocoa , once combined make a well in the centre. Add egg, milk and olive oil spread and mix until a smooth batter.
- Once batter is well combined, pour into the ramekins.
- For the chocolate sauce, sift the cocoa powder into a bowl and combine with the sugar. Sprinkle the chocolate powder mixture over the pudding mixture.
- Pour the boiling water over the cocoa mixture, gently.
- Place in oven and bake for 20-25 mins.
- Serve with light ice cream.
