This is a great way to include lots of vegetables without really trying. You could also add bok choy or fresh baby spinach, a touch of chilli. If you don't want noodles then have some brown rice instead.
This recipe is low sugar, low fat and high protein.
Ingredients
- 250g beef, diced
- 1 tbsp. olive oil
- 2 clove garlic, crushed
- 1 carrot, finely sliced
- 1 cup cauliflower florets
- 6 button mushrooms sliced
- ¼ cup water
- 1 onion, finely sliced
- ½ red capsicum, finely sliced
- 10 green beans, sliced
- 200g thin hokkien noodles
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp honey
Method
- Slice beef into thin strips. Heat wok or medium non stick frying pan over medium heat. Add ½ olive oil and beef stir fry until golden brown, set aside.
- Add remaining oil to pan and stir fry onion, capsicum until golden brown, around 3-4 mins then add garlic stirring for 1 minute then add water to pan and cook carrot, mushrooms, beans and cauliflower until softened. Add beef and stir until combined. Squeeze honey over mixture then add the soy and oyster sauce.
- Remove noodles from pack and untangle in hot water, drain and add to beef and vegetables.
- Serve immediately.
