Cauliflower has only 1/3 of the calories of potato and less than 20% of the carbs of a potato, making them great for weight loss and low carb diets.
You want to serve this dish slightly chunky and not as a puree. Instead of mashing you can place the ingredients into your Kitchen Aid mixer or similar and use the beating attachment.
Ingredients
- 500g cauliflower
- 30g butter
- 1/4 cup milk
- Salt and pepper to taste
Method
- Cut your cauliflower into florets and place into a large steamer. Steam until soft.
- Once cooked mash with butter and milk, season with salt and pepper.
- Serve instead of mashed potatoes.
