These are a great treat but not to have every day. Make them for when you are entertaining, everyone will love them. They are sweet, so only make them into little tiny balls. They can be stored in the refrigerator, in a container for 3-4 days.
Ingredients
- 3/4 cup dried apricots, finely chopped
- 1/2 cup slivered almonds, roughly chopped
- 1/2 cup condensed milk
- 1/2 cup plain or greek yoghurt
- 1 maderia cake 450g
- 2 tbsp. coconut
- 2 tbsp. orange juice
- 1 orange, grated rind
Method
- Place chopped dried apricots, almonds, milk, coconut, orange juice, and rind in a large bowl and mix well with a spoon.
- Crumble the maderia cake with ingredients and mix with your hands.
- Use teaspoons of mixture to make small balls.
- Place on a tray lined with baking paper, sprinkle a little coconut over and let sit in fridge for 1 hour.
- Place in a container, will keep in fridge for a couple of days.
