Tuna is a dieter's staple, and for good reason. It is extremely low in fat, is good for you and can be made to taste great. For added protein we have included cottage cheese. For a low fat version just omit the mayonnaise.
This recipe is low sugar and high protein.
Ingredients
- 1 tortilla, light
- 1 95g can tuna, drained
- 1/3 cup corn kernels
- 2 tbsp. salsa
- 2 tbsp. cottage cheese
- 1 tbsp. light mayonnaise
- 1/2 tomato, diced
- Salt & pepper to taste
Method
- Mix together tuna, corn, tomato, mayonnaise and cottage cheese until well combined, season with S & P.
- Option to heat tortilla up in microwave for approximately 15 seconds on medium heat, otherwise you can leave cold.
- Place the salsa down the centre of the tortilla.
- Place tuna mixture over the salsa..
- Roll up and seal with a toothpick.
- Carefully cut into pin wheels you should get about 5 pieces per tortilla.
