Another serving suggestion is to replace cauliflower with broccoli or zucchini.
Ingredients
- 2 Sausages (100g), sliced or diced
- 2 cups Cauliflower, tiny florets
- 1½ cups dried Pasta, Orecchiette
- 100g Baby Spinach leaves
- ½ red Capsicum, chopped
- 1 Chilli or Chilli Flakes to taste
- Sprinkle Oregano
- ½ cup grated Cheese, reduced fat
- 1 tbsp. grated Parmesan cheese
- 2 cloves Garlic, crushed
- 1 tbsp. Olive oil
- 1 cup Chicken stock, hot
- Salt & Pepper to taste
Method
- Cook pasta as per instructions.
- Heat a non-stick fry pan with olive oil and cook sausages, capsicum, and cauliflower on medium heat.
- Once cauliflower has softened add garlic spinach, chilli and oregano, stir for a minute until spinach has started to wilt then add cooked pasta. Season with salt and pepper, add stock, a little at a time, you may not need all but it will help keep the mixture moist. Now add grated cheese.
- Serve immediately with a sprinkle of parmesan cheese.
