The cookies are very soft and moist, so please be gentle with them. The mashed banana helps hold the mixture together and helps gives these biscuits a natural sweetness.
Ingredients
- 2 very ripe large bananas, mash with a fork
- 1 apple, cored, peeled and cubed
- 1 tsp. vanilla essence
- 2 tbsp. olive oil
- ½ egg
- ¾ cup almond meal
- 1 tsp. cinnamon
- ½ tsp. baking powder
- 1 cup rolled oats
- 2 tbsp. golden syrup or honey
Method
- Preheat oven to 190C (375F). Line an oven tray with baking paper.
- In a large bowl place oats, almond meal, cinnamon, baking powder, mix with a spoon.
- Crack an egg into a small bowl, mix with fork and pour half into dry ingredients. Empty out remaining egg and in the same small bowl mix the oil and golden syrup vanilla. Add to the dry ingredients and mix.
- Now add to the mixture the mashed banana and diced apple.
- With your hands form little cookie sized rounds, flatten a little and place on lined tray.
- Bake for 20 minutes, take out, set on wire rack to cool.
