Although this salad has the wonderful taste of pizza, it clearly doesn't have all the fat!

Ingredients

  • ½ cup dried penne
  • 1 tomato, diced
  • 1 spring onion, sliced
  • 15g pepperoni
  • Sprinkle of oregano
  • ¼ capsicum, diced
  • 20g olives
  • 10g sliced red onion
  • 1 tbsp. feta
  • 1 tbsp. olive oil
  • Cracked pepper

Method

  1. Cook pasta as per instructions. Do not overcook, you want al dente. Drain and place in a mixing bowl.
  2. Add all other ingredients, drizzle olive oil over and mix with tongs.
  3. Serve with grilled chicken or beef.
