We have used fajita season mix as it has a lovely smokey flavour. This can be found next to the taco seasoning mix in the supermarket.
You can add salsa instead of sweet chilli sauce however not too much as this has a lovely delicate flavour.
This recipe makes 4 soft tacos which is enough for 2 people. The nutritionals are based on each taco.
This recipe is low sugar, high protein.
Ingredients
- 2 firm white fish fillets ie snapper, rockling your favourite white fish
- Juice of 1 lime
- 2 garlic cloves crushed
- 1 tbsp. fajita seasoning mix
- 1 tsp. ground cumin
- Pinch chilli (optional)
- 1 tbsp. olive oil
- ½ avocado, sliced
- 1 tomato diced
- Handful lettuce
- Drizzle sweet chilli sauce or mexican salsa
- 4 small soft tacos
Method
- Place the fish in a dish and squeeze the lime on top. Add the garlic clove crushed, cumin, fajita seasoning and oil over the fish, and then just pinch of chilli powder. Season with salt and pepper. Make sure the ingredients are coated on both sides of the fish. Place in fridge for 15 mins.
- On a BBQ or griddle pan, spray with cooking spray and on med high heat cook the fish, for 3 minutes each side. Only turn over once as the fish is delicate. Once opaque remove from heat and warm the tortilla in a microwave for 30 seconds.
- Break up or slice fish, place on each tortilla in the middle. Place sliced avocado (or guacamole) on top of fish with lettuce, tomato and salsa. Drizzle salsa or sweet chilli sauce over and fold.
