If you really want to jazz this up add a tiny bit of bacon or chorizo with the onion for a smokey flavour.
This recipe is low sodium, low sugar, low saturated fat, high protein.
Ingredients
- 2 slices multigrain bread
- 2 eggs
- ¼ cup milk
- 1 clove garlic, crushed
- 4 mushrooms, sliced
- 4 cherry tomatoes, halved
- Sprinkle oregano
- 1 tbsp. chives, chopped
- ½ onion, diced
- Handful spinach leaves
- ¼ capsicum, diced
Method
- Heat olive oil in a non-stick fry pan and sauté onion and capsicum until cooked.
- Add mushrooms, garlic, season with salt and pepper and continue to cook a further few minutes.
- Add the cherry tomatoes and spinach sprinkle some oregano and cook a further few minutes then turn off heat.
- In a mixing bowl place eggs, milk, season with salt and pepper then whisk.
- Heat a non stick frypan which has been sprayed with cooking spray.
- Dip your bread into the egg mixture ensuring that both sides are coated.
- Place into pan and cook 1 minute each side, take out and place onto serving plates.
- Divide savoury topping onto French toast, garnish with chopped chives.
