Tuna is a dieter's staple, and for good reason. It is extremely low in fat, is good for you and can be made to taste great. For added protein we have included cottage cheese. For a low fat version just omit the mayonnaise.

This recipe is low sugar and high protein.

Ingredients

  • 1 tortilla, light
  • 1 95g can tuna, drained
  • 1/3 cup corn kernels
  • 2 tbsp. salsa
  • 2 tbsp. cottage cheese
  • 1 tbsp. light mayonnaise
  • 1/2 tomato, diced
  • Salt & pepper to taste

Method

  1. Mix together tuna, corn, tomato, mayonnaise and cottage cheese until well combined, season with S & P.
  2. Option to heat tortilla up in microwave for approximately 15 seconds on medium heat, otherwise you can leave cold.
  3. Place the salsa down the centre of the tortilla.
  4. Place tuna mixture over the salsa..
  5. Roll up and seal with a toothpick.
  6. Carefully cut into pin wheels – you should get about 5 pieces per tortilla.
