Feel free to add cauliflower or other vegetables of your choice. Make sure you use a good quality wine (one you would love to drink) as this will make all the difference.
This recipe is low sodium, low sugar, low fat and high protein.
Ingredients
- 1kg beef, diced, fully trimmed of fat
- 2 tbsp. olive oil
- 1 large zucchini, sliced
- 3 carrots, sliced
- 3-4 potatoes, sliced skin on
- 8-10 medium mushrooms, quartered
- 3 cup good quality red wine, Shiraz or Cab Sav
- 2 cup beef stock
- 2 tsp. rosemary
- 2 tsp. thyme
- 4-5 cloves garlic
- 2 onions, sliced
- 1 red capsicum, chopped
- Cracked pepper to taste
- Salt to taste
- 2 heaped tbsp. cornflour mixed with ½ cup cold water
Method
- Turn on your slow cooker.
- Place your onion, capsicum into the slow cooker.
- Heat a fry pan with olive oil and sear your meat into 2 or 3 batches, place into slow cooker.
- Place your wine, stock, garlic, sugar, herbs, season with salt and pepper. Cook on low heat for 4-6 hours.
- After this time add the potatoes, mushrooms, zucchini, and continue to cook a further 4-6 hours. In the last hour add cornflour mixed with water, stirring in and cook for a little while longer.
- Any leftovers are suitable to freeze.
