Most people love Macaroni and Cheese, but those on a diet think it's too high in fat to include in their weight loss diet.
Ingredients
- 400g Pasta Elbow or Macaroni
- 1.5 tbl cornflour
- ½ teaspoon dry mustard
- ¼ teaspoon salt
- 1 can evaporated milk low fat
- 200g water
- 300g low fat cheese
- 3-4 rashers short cut bacon
- 1 clove garlic crushed
Method
- Preheat oven to 170c.
- Lightly spray with oil a baking dish.
- In a non stick small frypan cook bacon until crispy and set aside.
- In a medium saucepan, combine cornflour, salt, mustard, pepper and garlic a saucepan. Stir in evaporated milk and water, cooking over medium heat until mixture starts simmering. Remember to keep stirring otherwise mixture will not be smooth. Simmer for 1 minute then remove from heat. Stir in ¾ of the cheese until incorporated. Add the pasta and bacon and mix well.
- Pour into prepared oven dish and top with the rest of the cheese. (Option to sprinkle breadcrumbs on top for a crunchy texture)
- Bake for 20-25 minute or until cheese is melted and pasta is cooked.
