Pumpkins are healthy and very low in kilojoules so they are great for anyone watching their weight.
Ingredients
- 1.5 cups self raising flour
- Pinch of salt
- 1 tablespoon margarine
- 3/4 cup low fat milk
- 1 cup cooked mashed pumpkin - you can steam or cook in the oven
- 1 tablespoon milk, extra
- Fig jam to serve (available at specialist food stores)
Method
- Preheat oven to 200 degrees (400F).
- Lightly grease a scone tray. Sift flour and salt and place in food processor, add margarine and blend until the mix resembles breadcrumbs.
- Add the milk and mashed pumpkin and blend until just combined.
- Take out of bowl and roll out to about 2cm thickness and using scone cutter cut the scones out. Brush top of scones with milk and play one tray.
- Cook in hot oven for about 10-12 minutes or until lightly browned on top.
- Serve warm with fig jam (or your favorite jam).
