Pumpkins are healthy and very low in kilojoules so they are great for anyone watching their weight.

Ingredients

  • 1.5 cups self raising flour
  • Pinch of salt
  • 1 tablespoon margarine
  • 3/4 cup low fat milk
  • 1 cup cooked mashed pumpkin - you can steam or cook in the oven
  • 1 tablespoon milk, extra
  • Fig jam to serve (available at specialist food stores)

Method

  1. Preheat oven to 200 degrees (400F).
  2. Lightly grease a scone tray. Sift flour and salt and place in food processor, add margarine and blend until the mix resembles breadcrumbs.
  3. Add the milk and mashed pumpkin and blend until just combined.
  4. Take out of bowl and roll out to about 2cm thickness and using scone cutter cut the scones out. Brush top of scones with milk and play one tray.
  5. Cook in hot oven for about 10-12 minutes or until lightly browned on top.
  6. Serve warm with fig jam (or your favorite jam).
