The pineapple, beetroot and tomato, as well as adding a great flavour combination, refresh the palette because of their high water content. This gives this burger a very "summery" feel. Most of the sodum in this recipe comes from the bun, so if possible use a wholemeal or multigrain bun.
This recipe is low fat, low sugar, high protein.
Ingredients
- 1 chicken breast
- 1 large tomato, sliced
- 2 pineapple rings
- Beetroot, 8 small or 2 large slices
- 1 tbsp. mayonnaise
- 1 cup lettuce
- 2 bread rolls
- Cooking Spray
Method
- On a griddle pan or BBQ, heat on high heat. Flatten chicken so even, and spray the chicken breast with oil on both sides and cook on med heat, around 10 mins.
- Whilst chicken is cooking, cut roll in half and toast the inner of each roll under the grill.
- When chicken is cooked, take off heat, slice in half, on an angle.
- Layer each roll with lettuce, tomato, beetroot, chicken, mayo and pineapple.
- Serve with Healthy Potatoes.
